Garlic Butter Chicken Bites (One Skillet, 20 Minutes)

Some weeknights, dinner has to happen fast — and these garlic butter chicken bites deliver. Bite-size chicken breast pieces are seasoned with a simple spice blend, seared golden in one skillet, then tossed in melted butter with fresh garlic. Dinner hits the table in 20 minutes, from a single pan.

If easy chicken dinners are your thing, this recipe belongs next to our Slow Cooker White Chicken Chili in your weeknight rotation. That one cooks low and slow while you are out; this one rescues the nights the slow cooker stayed in the cupboard. Both are family-friendly with short ingredient lists.

Kids love these bites too: small, dippable pieces, savory seasoning without any heat, and only one skillet to wash.

Why you’ll love these chicken bites

Speed: Five minutes of prep, fifteen minutes of cooking. The entire recipe — faster than takeout once you count the delivery window.

One skillet: Sear, butter, garlic, and the final toss all happen in the same pan. Fewer dishes is a feature, not a footnote, on a busy night.

Kid-friendly: No heat, no fussy flavors, no bones. Serve with rice or mashed potatoes, and let picky eaters dip them in ketchup or mild yogurt sauce.

Meal-prep friendly: Cook a batch on Sunday for high-protein bites ready for salads, wraps, and grain bowls all week. They reheat well in a hot skillet (see below).

What you need

The list is short on purpose. Here is what goes in the skillet, plus the swaps that keep it flexible.

Chicken: 1.5 lb (680 g) boneless, skinless chicken breasts, cut into 1-inch (2.5 cm) cubes — keep the pieces even so they cook at the same rate. Thighs work too (see the FAQ).

Seasoning: Paprika, garlic powder, Italian seasoning, kosher salt, and black pepper. Warm and savory, with no heat. Smoked paprika is a fine swap for regular paprika; dried oregano plus basil can stand in for Italian seasoning.

Fat: Olive oil for the sear — it handles medium-high heat well — and 4 tablespoons (55 g) unsalted butter for the sauce. Salted butter works if you trim the added salt a little. For dairy-free, use a dairy-free butter alternative (see FAQ).

Garlic, parsley, lemon: Five to six fresh cloves, minced (about 2 tablespoons) — fresh garlic is the backbone of the dish and non-negotiable — plus 2 tablespoons chopped fresh parsley. Lemon wedges are optional but recommended; a squeeze brightens the rich butter.

How to make garlic butter chicken bites

Step 1: Season the chicken

Pat the chicken cubes dry with paper towels, then toss with the paprika, garlic powder, Italian seasoning, salt, and pepper. A dry surface lets the spices cling and the sear develop — wet chicken steams instead of browning.

Step 2: Heat the skillet

Pour 2 tablespoons of olive oil into a large skillet and heat over medium-high until shimmering. Give the pan a minute or two to get properly hot — the chicken should sizzle the instant it touches the metal, since a lukewarm pan is the number-one cause of pale chicken.

Step 3: Sear the chicken

Add the chicken in a single layer with space between the pieces. If the skillet is crowded, work in two batches — crowded chicken steams in its own juices and never gets golden. Sear 6–8 minutes total, turning once, until deeply golden and the internal temperature reads 165°F (74°C). Transfer to a plate.

Step 4: Make the garlic butter

Reduce the heat to medium. Melt the 4 tablespoons of butter, scraping up the browned bits from the chicken — concentrated flavor. Add the minced garlic and cook 30–60 seconds, stirring constantly, until fragrant. Watch it closely: garlic goes from fragrant to bitter and browned in seconds.

Step 5: Toss and serve

Return the chicken to the skillet and toss about 1 minute so every piece gets coated in garlic butter. Shower with parsley, squeeze over lemon if you like, and serve immediately — best straight from the pan while the butter is still glossy.

Tips for juicy, golden bites

Pat the chicken dry. This is the biggest difference between restaurant-style golden chicken and grey steamed chicken — paper towels, both sides, before seasoning.

Do not crowd the pan. Pieces need breathing room to sear. Two batches of perfectly golden chicken beat one batch of pale chicken every time.

Do not burn the garlic. Thirty to sixty seconds over medium heat, stirred constantly, is all it needs. If the garlic darkens past light gold, it turns bitter — when in doubt, pull it early.

Rest 2 minutes. Let the bites sit briefly after the final toss so the juices redistribute instead of running out onto the plate.

Variations

Halal swaps and notes: This recipe is halal as written — no pork, no alcohol anywhere. Just use halal-certified chicken; everything else (butter, olive oil, garlic, spices, parsley) is naturally halal. There is no wine or spirit in the sauce or anywhere near this recipe, so nothing needs substituting.

Spicy version: Add 1/2 teaspoon of red chili flakes to the butter with the garlic. The heat blooms in the fat and coats every piece — start with less if unsure.

Lemon-pepper version: Skip the Italian seasoning, double the black pepper, and finish with the zest of one lemon along with the parsley. Bright, peppery, and excellent over rice.

Serve it differently: Toss the bites with hot cooked pasta and a splash of pasta water, pile them over steamed rice with extra pan sauce, or tuck them into warm wraps with shredded lettuce and yogurt sauce.

What to serve with chicken bites

Buttery mashed potatoes: The classic pairing — the garlic butter sauce from the skillet is made for spooning over creamy mashed potatoes. Make them first and keep warm while the chicken sears.

Steamed rice: Fluffy white or brown rice soaks up the garlic butter and keeps the whole meal at one skillet plus a rice cooker. A squeeze of lemon ties it together.

Roasted vegetables: Broccoli, green beans, carrots, or asparagus roasted with olive oil and salt. The caramelized edges play well against the savory chicken.

Crusty bread: Warm, crusty bread is the ideal tool for mopping up every last drop of garlic butter from the skillet.

Storage and reheating

Fridge: Store leftovers in an airtight container in the refrigerator for 3–4 days. They stay flavorful cold, which makes them great for next-day salads and wraps.

Reheating: Warm them back in a skillet over medium heat for 2–3 minutes with a tiny knob of butter or a drizzle of olive oil — this re-crisps the outside. The microwave works in a pinch (about 90 seconds, covered), but the texture will be softer.

Freezer: Freeze cooled bites in a single layer on a baking sheet, then move to a freezer bag for up to 2 months. Thaw overnight in the fridge and reheat in a hot skillet, adding fresh parsley after reheating.

Notes

Halal notes: use halal-certified chicken — everything else in this recipe is naturally halal, no wine or spirits anywhere near it. Don't crowd the pan: sear in batches so the chicken browns instead of steaming. Keep the garlic moving and off high heat so it turns sweet, never bitter. Leftovers keep 3–4 days in the fridge; reheat in a skillet for 2–3 minutes.

Frequently asked questions

Can I use chicken thighs? Yes. Cut boneless, skinless thighs into 1-inch pieces and follow the same method. Thighs are a bit more forgiving thanks to their fat content, but still check for 165°F (74°C) inside. Cook time is about the same.

Can I make this dairy-free? Yes. Swap the butter for the same amount of a dairy-free butter alternative and keep everything else identical. Plain olive oil works in a pinch, though the sauce will be less rich.

Why is my garlic bitter? It browned. Minced garlic turns bitter fast over high heat — that is why the recipe drops to medium heat and limits it to 30–60 seconds of constant stirring. If it went dark, wipe the pan and redo the butter step rather than serving a bitter sauce.

Can I double the recipe? Absolutely — use 3 lb (1.36 kg) of chicken and double the seasoning, oil, and butter. Sear in batches so the pan stays hot; crowding is the enemy of a good sear, and it is tempting to pile it all in at once.
