Ingredients

Chicken bites
  • 1.5 lb boneless skinless chicken breasts cut into 1-inch / 2.5 cm cubes; about 680 g
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
Garlic butter
  • 4 tbsp unsalted butter about 55 g
  • 5-6 cloves garlic minced, about 2 tbsp
  • 2 tbsp fresh parsley chopped
  • lemon wedges to serve, optional

Equipment

  • Large skillet

Method

  1. Pat the chicken cubes dry with paper towels, then toss with the paprika, garlic powder, Italian seasoning, salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the chicken in a single layer (work in two batches if crowded) and sear 6–8 minutes, turning once, until deep golden and the internal temperature reads 165°F (74°C). Transfer to a plate.
  4. Reduce the heat to medium. Melt the butter, add the minced garlic and cook 30–60 seconds until fragrant but not browned.
  5. Return the chicken to the skillet and toss to coat in the garlic butter, about 1 minute. Shower with parsley and serve immediately, with lemon wedges if you like.

Notes

Halal notes: use halal-certified chicken — everything else in this recipe is naturally halal, no wine or spirits anywhere near it. Don't crowd the pan: sear in batches so the chicken browns instead of steaming. Keep the garlic moving and off high heat so it turns sweet, never bitter. Leftovers keep 3–4 days in the fridge; reheat in a skillet for 2–3 minutes.
