If one chicken dinner genuinely lives up to its dramatic name, it is marry me chicken. Juicy, deeply seasoned chicken breasts with crispy golden edges get spooned over with a silky sauce of sun-dried tomatoes, garlic, heavy cream and Parmesan, finished with fresh basil.

The air fryer changes the game. Circulating hot air crisps the seasoned crust while the inside stays incredibly juicy — no steaming in sauce like the skillet version. The sauce builds separately in about 10 minutes and finishes exactly when the chicken does. Restaurant-worthy dinner, roughly 30 minutes, almost no cleanup.

And it is 100% halal, as every recipe on Fine Dine Review is: halal chicken, a dairy-based sauce, no alcohol and no pork products anywhere. If you love creamy chicken dinners, my Garlic Butter Chicken Bites are another 20-minute weeknight hero.

Ingredients

For the chicken
  • 4 Boneless, skinless chicken breasts about 1 1/2 lb total; pounded to an even 3/4-inch thickness
  • 1 tablespoon Olive oil or oil from the sun-dried tomato jar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
For the marry me sauce
  • 1 tablespoon Oil from the sun-dried tomato jar or olive oil
  • 3 Garlic cloves, minced
  • 1/2 cup Oil-packed sun-dried tomatoes, drained and chopped
  • 1/2 cup Low-sodium chicken broth
  • 3/4 cup Heavy cream
  • 1/2 cup Freshly grated Parmesan cheese grate it yourself for a smooth, lump-free melt
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon Red pepper flakes plus more to taste
  • 1/4 cup Torn fresh basil leaves plus more for serving

Equipment

  • Air fryer
  • Large skillet
  • Instant-read thermometer
  • Meat mallet or rolling pin

Method

  1. Pat the chicken breasts very dry with paper towels — this is the single most important step for a crispy air fryer crust. Wet chicken steams; dry chicken sears.
  2. Pound the chicken to an even 3/4-inch thickness with a meat mallet or rolling pin. Drizzle with the oil, then rub all over with the garlic powder, Italian seasoning, smoked paprika, salt and pepper.
  3. Preheat the air fryer to 375°F (190°C) for 3 to 5 minutes. Arrange the chicken in a single layer in the basket with space between each piece — cook in batches if needed.
  4. Air fry for 15 to 18 minutes, flipping once halfway, until deeply golden at the edges and an instant-read thermometer reads 165°F (74°C) at the thickest point. Rest 5 minutes before slicing so the juices stay put.
  5. While the chicken cooks, build the sauce. Heat the sun-dried tomato oil in a large skillet over medium heat. Add the garlic and cook 60 seconds until fragrant, not browned.
  6. Stir in the chopped sun-dried tomatoes and cook 1 to 2 minutes. Pour in the chicken broth, scraping up any browned bits, then add the heavy cream, Italian seasoning and red pepper flakes.
  7. Reduce to medium-low and simmer gently 3 to 4 minutes until the sauce thickens enough to coat the back of a spoon. Take the pan off the heat and whisk in the Parmesan in three additions until silky. Taste and adjust the salt.
  8. Slice the rested chicken on a slight bias, lay it into the warm sauce, and spoon sauce generously over the top. Tear the fresh basil over everything and serve immediately.

Notes

Cream loves a gentle simmer — never a hard boil — or it can split. Always use freshly grated Parmesan: pre-shredded cheese has anti-caking starches that melt grainy. Pounding the chicken to an even thickness is what keeps every piece juicy. Halal note: this recipe is 100% halal — halal chicken, dairy-based sauce, no alcohol and no pork products. Leftovers keep 3 to 4 days in the fridge; reheat gently with a splash of cream.

Why the Air Fryer Version Wins

Most marry me chicken recipes cook everything in one skillet. It works, but the chicken often steams in the sauce instead of searing. The air fryer fixes that: intense circulating heat and a dry cooking environment whisk moisture away from the surface, so the spice-rubbed crust actually crisps.

The timing is the second win. While the chicken air fries at 375°F (190°C) for 15 to 18 minutes — flipping once halfway — you build the sauce in a skillet. Both finish together: the chicken rests for 5 minutes (non-negotiable for juicy meat) while the Parmesan goes into the sauce off the heat. No cold chicken, no split sauce, no soggy crust.

What You Need

The full measured list is in the recipe card, but here is the pantry view. For the chicken: four boneless, skinless breasts (about 1½ lb total), olive oil or the flavored oil from your sun-dried tomato jar, garlic powder, Italian seasoning, smoked paprika, kosher salt and black pepper. For the sauce: that same sun-dried tomato oil, fresh garlic, ½ cup oil-packed sun-dried tomatoes, ½ cup chicken broth, ¾ cup heavy cream, ½ cup freshly grated Parmesan, Italian seasoning, red pepper flakes and fresh basil.

Three ingredients do the heavy lifting. Oil-packed sun-dried tomatoes bring jammy sweetness and tang — dry-packed ones taste flat by comparison. Heavy cream (36%+ fat) gives the sauce its luxurious body. And real Parmesan grated from a wedge melts silky, while pre-shredded cheese melts grainy from anti-caking starches. This is the one recipe where grating your own cheese genuinely matters.

How to Make Air Fryer Marry Me Chicken

Step 1 — Dry and pound. Pat the chicken completely dry with paper towels — wet chicken steams, dry chicken sears. Pound each breast to an even ¾-inch thickness so the thin end does not dry out before the thick end cooks through.

Step 2 — Season generously. Drizzle with oil and rub all over with the garlic powder, Italian seasoning, smoked paprika, salt and pepper. The air fryer will turn this spice rub into a gorgeous golden crust.

Step 3 — Preheat. Heat the air fryer to 375°F (190°C) for 3 to 5 minutes. A hot basket means the chicken starts searing the second it lands.

Step 4 — Air fry. Arrange in a single layer with space between the pieces — a crowded basket steams instead of crisps. Air fry 15 to 18 minutes, flipping halfway, until an instant-read thermometer reads 165°F (74°C) at the thickest point. Thin cutlets may finish at 12 to 14 minutes; thick breasts can need 22. The thermometer decides, not the clock.

Step 5 — Rest. Rest 5 minutes before slicing so the juices stay in the meat, not on the cutting board. Use this window to finish the sauce.

Step 6 — Start the sauce. Heat the sun-dried tomato oil in a large skillet over medium heat. Cook the minced garlic 60 seconds until fragrant — golden, never browned, because browned garlic turns bitter. Stir in the chopped sun-dried tomatoes and cook 1 to 2 minutes.

Step 7 — Simmer. Pour in the broth, scraping up the browned bits (pure flavor). Add the cream, Italian seasoning and red pepper flakes. Drop to medium-low and simmer gently 3 to 4 minutes until the sauce coats the back of a spoon. Keep it at a lazy bubble — a hard boil can split cream sauces.

Step 8 — Finish and serve. Off the heat, whisk in the Parmesan in three additions until silky. Taste for salt. Slice the rested chicken on a bias, lay it into the warm sauce, spoon more over the top, tear on the basil and serve immediately.

Tips for the Juiciest Chicken and Creamiest Sauce

  • Dry like you mean it. Paper towels are your crispiness insurance — skipping this is the top reason air fryer chicken turns soggy.
  • Even thickness beats matched size. A uniform ¾ inch matters more than identical breasts.
  • Do not stack the basket. Hot air must reach every surface; cook in batches and tent the first in foil.
  • Trust the thermometer. 165°F (74°C) at the thickest point, checked a minute early to beat carryover heat.
  • Add Parmesan off the heat. Boiling liquid turns fresh Parmesan gritty; residual heat melts it into silk.
  • Salt last. Parmesan, broth and sun-dried tomatoes already bring plenty — taste first.

Variations and Halal Swaps

Swap breasts for boneless thighs — even juicier; air fry at 375°F for 14 to 16 minutes. Stir baby spinach into the sauce at the end for a Tuscan twist, or add sliced mushrooms with the garlic. For a lighter version, replace half the cream with half-and-half and keep the simmer extra gentle. Low-carb? Serve over cauliflower mash or zucchini noodles.

A note on halal: every recipe here is developed halal from the start. Buy certified halal chicken, the cream and Parmesan are naturally fine, and there is no wine, no bacon, no pork and no alcohol anywhere in this dish. Classic marry me chicken sometimes deglazes with white wine — this one deliberately uses chicken broth instead, so the sauce stays fully halal-friendly with zero flavor compromise.

What to Serve With It

This sauce is too good to leave on the plate, so serve with something built to catch it: buttery mashed potatoes, fluffy rice, or penne tossed in the extra sauce. For a lighter plate, roasted asparagus or an arugula-lemon salad cuts the richness. And warm crusty bread is non-negotiable — that sauce deserves to be mopped up to the last drop.

Storage and Reheating

Leftovers keep 3 to 4 days in an airtight container in the fridge — the flavors deepen overnight. Reheat gently in a skillet over low heat with a splash of cream or broth to loosen the sauce. Skip the freezer for the finished sauce: dairy-based sauces can turn grainy when thawed. To meal prep, freeze the cooked chicken on its own and make the sauce fresh — it only takes 10 minutes.

Frequently Asked Questions

Can I make the sauce entirely in the air fryer?
You can — mix everything except the Parmesan in a small oven-safe dish, air fry at 350°F for 6 to 8 minutes, then stir in the Parmesan. But the skillet gives the silkiest result and finishes at the same time as the chicken.

Why did my cream sauce split?
Too much heat, almost always. Cream sauces want a gentle simmer, never a rolling boil. Cold cream from the fridge and pre-shredded Parmesan are the other two usual suspects.

Can I use chicken thighs?
Absolutely — boneless, skinless thighs are fantastic and more forgiving. Air fry at 375°F for 14 to 16 minutes, then check for 165°F internal.

Is marry me chicken halal?
This version is 100% halal: certified halal chicken, a dairy-based sauce, no alcohol or pork products. Wine-based deglazing is replaced with chicken broth.
