Method
- Pat the chicken thighs completely dry with paper towels, on both sides. Dry skin is the whole secret to crispy air fryer chicken — wet skin steams instead of crisping.
- Stir the garlic powder, smoked paprika, onion powder, oregano, salt and pepper together in a small bowl. Rub the thighs all over with the olive oil, then coat evenly with the spice mix, getting some under the skin where you can.
- Preheat the air fryer to 400°F (200°C) for 3 to 5 minutes. Lightly oil the basket or give it a quick spray of cooking spray.
- Arrange the thighs skin-side up in a single layer with space between them — do not stack or crowd the basket. Cook in batches if your air fryer is small.
- Air fry for 18 to 20 minutes, until the skin is deeply golden and crackly and an instant-read thermometer reads 175°F (80°C) at the thickest part near the bone. There is no need to flip — the hot air crisps the skin from above.
- Rest the thighs for 5 minutes before serving so the juices settle. Sprinkle with chopped parsley and serve with lemon wedges.
Notes
Bone-in thighs stay juicier than boneless in the air fryer and the skin crisps better — if you use boneless, skin-on thighs, start checking at 15 minutes. Halal note: use halal-certified chicken; this recipe is 100% halal with no alcohol and no pork products. Leftovers keep 3 to 4 days in the fridge; reheat in the air fryer at 375°F (190°C) for 4 to 5 minutes to bring the skin back to life — the microwave makes it soggy.
