Some dinners just work on a weeknight, and these air fryer buffalo chicken tenders are one of them. Juicy strips of chicken in a crunchy panko coating, air fried until deeply golden, then tossed in a buttery buffalo sauce that clings to every ridge. No deep frying, no pot of oil, no greasy kitchen — just a basket, a bowl and about 30 minutes from fridge to table.

The air fryer does what hot oil does, without the mess. Hot air at 400°F (200°C) crisps the panko into a crunchy shell while the chicken inside stays juicy, and the sauce goes on at the very end, while the tenders are still hot, so it coats them in a glossy orange layer instead of soaking in and softening the coating.

Everything here is 100% halal: halal-certified chicken, a simple seasoned flour and panko coating, and a buffalo sauce made from hot sauce and butter — no alcohol and no pork products anywhere. Just check the label on bottled hot sauce if certification matters to your household. If you already love my Air Fryer Chicken Wings, these tenders are the same idea in strip form — easier to eat, quicker to cook, and perfect for dipping.

Ingredients

For the tenders
  • 1.5 lb Boneless, skinless chicken breasts about 680 g; halal-certified, sliced into 12 even strips
  • 1/2 cup Plain flour for the first coating
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Onion powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 2 Large eggs beaten, for the egg wash
  • 1.5 cups Panko breadcrumbs for the crunchiest coating — not fine breadcrumbs
  • 1 tablespoon Olive oil spray to mist the tenders so they crisp and brown
For the buffalo sauce
  • 1/2 cup Hot sauce (Frank's-style) the classic buffalo base — check the label for halal certification
  • 3 tablespoons Unsalted butter melted into the hot sauce for a glossy, clinging coating
  • 1 teaspoon Honey optional, to round off the heat
  • 1/4 teaspoon Garlic powder for the sauce
To serve
  • 1/2 cup Ranch or blue cheese dip optional, for dipping
  • 4 Celery sticks optional, classic with buffalo chicken
  • 2 tablespoons Fresh chives or parsley, chopped optional, for sprinkling

Equipment

  • Air fryer
  • 3 shallow bowls
  • Sharp knife and chopping board
  • Tongs
  • Instant-read thermometer
  • Small Saucepan
  • Large mixing bowl

Method

  1. Slice the chicken breasts into 12 even strips, about 1 inch wide. Try to keep them the same thickness so they cook at the same speed — if a breast is very thick, slice it horizontally first, then into strips.
  2. Set up three shallow bowls: flour mixed with the garlic powder, smoked paprika, onion powder, salt and black pepper in the first; the beaten eggs in the second; and the panko in the third.
  3. Bread each strip in turn: coat it in the seasoned flour and shake off the excess, dip it in the egg so it is fully wet, then press it firmly into the panko until it is coated all over. Lay the breaded strips on a plate and let them rest for 5 minutes — this helps the coating stick.
  4. Preheat the air fryer to 400°F (200°C) for 3 to 5 minutes. Mist the basket lightly with olive oil spray.
  5. Arrange the tenders in a single layer with space between them — never stacked, never crowded. Mist the tops with olive oil spray. Cook in two batches if your basket is small; crowded tenders steam instead of crisping.
  6. Air fry at 400°F (200°C) for 12 to 14 minutes, flipping the tenders halfway through, until the coating is deeply golden and crunchy and a thermometer reads 165°F (74°C) at the thickest part.
  7. While the tenders cook, make the buffalo sauce: warm the hot sauce in a small saucepan over low heat, whisk in the melted butter, honey and garlic powder, and keep it warm — do not boil it.
  8. Rest the tenders for 2 minutes, then toss them in the warm buffalo sauce in a large bowl until every tender is glossy and coated. Serve straight away with ranch or blue cheese dip, celery sticks and a sprinkle of chopped chives.

Notes

For the crunchiest coating, use panko — fine breadcrumbs go soft in the air fryer. Let the breaded tenders rest 5 minutes before cooking so the coating sets, and mist them with oil spray or the panko stays pale and dry. Toss in the sauce only when you are about to eat: sauced tenders soften fast. Halal note: this recipe is 100% halal with halal-certified chicken; check bottled hot sauce for halal certification if that matters to your household. Leftovers keep 3 to 4 days in the fridge; re-crisp unsauced tenders in the air fryer at 375°F for 4 to 5 minutes — never the microwave.

Why you’ll love these buffalo chicken tenders

First, the crunch. Panko breadcrumbs are the whole secret: their large, airy flakes crisp into a craggy golden shell that fine breadcrumbs never manage, with just a light mist of oil spray — no deep frying, no splatter, no oil to throw away.

Second, the sauce. Buffalo sauce is just hot sauce and butter, whisked together warm. The butter rounds off the hot sauce’s vinegar sharpness and helps it cling, so every tender comes out glossy and evenly coated. A teaspoon of honey is optional — it takes the edge off the heat for younger eaters without making the sauce sweet.

Third, the speed. Fifteen minutes of prep, fourteen in the air fryer, and dinner is ready in about half an hour — a weeknight dinner, a game-day platter and a lunchbox favourite in one recipe.

What you need

The full measured list is in the recipe card. The pantry view: 1.5 lb of chicken breasts (about 680 g), flour, garlic powder, smoked paprika, onion powder, salt and pepper, two eggs, panko and olive oil spray. For the sauce: half a cup of Frank’s-style hot sauce, three tablespoons of butter, a teaspoon of honey and a pinch of garlic powder. To serve: ranch or blue cheese dip, celery sticks and chopped chives.

Three choices matter most. Slice the breasts yourself — pre-cut strips are often uneven and cook unevenly. Use panko, not fine breadcrumbs: panko is what gives you that craggy, crunchy coating. And use halal-certified chicken, checking bottled hot sauce for halal certification if that matters to your household.

How to make air fryer buffalo chicken tenders

  1. Slice the chicken into strips. Cut the breasts into 12 even strips, about 1 inch wide and the same thickness so they cook evenly — slice very thick breasts horizontally first.
  2. Set up the breading station. Three shallow bowls: flour mixed with the garlic powder, smoked paprika, onion powder, salt and pepper in the first; the beaten eggs in the second; and the panko in the third.
  3. Bread each strip. Coat a strip in seasoned flour, shake off the excess, dip it in egg, then press it firmly into the panko until coated all over. Rest the breaded strips on a plate for 5 minutes so the coating sticks.
  4. Preheat the air fryer. Heat it to 400°F (200°C) for 3 to 5 minutes. Mist the basket lightly with olive oil spray so the coating does not stick.
  5. Arrange in a single layer. Leave space between the tenders — never stacked or crowded — and mist the tops with olive oil spray. Cook in two batches if your basket is small.
  6. Air fry 12 to 14 minutes. Flip halfway through, until the coating is deeply golden and a thermometer reads 165°F (74°C) at the thickest part.
  7. Make the buffalo sauce. While the tenders cook, warm the hot sauce in a small saucepan over low heat. Whisk in the melted butter, honey and garlic powder and keep it warm — do not boil it.
  8. Toss while hot and serve. Rest the tenders for 2 minutes, then toss them in the warm buffalo sauce until glossy and coated. Serve straight away with ranch or blue cheese dip, celery sticks and chopped chives.

Tips for the crispiest tenders

Rest the breaded strips before cooking. Five minutes on the plate lets the egg set and the panko bond to the chicken. Skip the rest and the coating slides off in the basket.

Do not crowd the basket. Air fryers crisp by moving hot air; pieces touching each other block that airflow. Two roomy batches beat one crowded batch every single time.

Sauce at the end, never at the start. Buffalo sauce on raw tenders burns and turns bitter. Cook them plain and crisp first, then toss in warm sauce right before serving.

Variations and halal swaps

Mild buffalo tenders: for younger eaters, use half hot sauce and half melted butter with an extra teaspoon of honey — the buffalo flavour with much less heat.

Extra-hot tenders: add 1/2 teaspoon of cayenne to the seasoned flour and a dash more hot sauce to the butter. Serve with plenty of ranch — the cool dip is part of the experience.

Honey BBQ tenders: skip the buffalo sauce and toss the hot tenders in 1/2 cup of warmed BBQ sauce with a tablespoon of honey. Check the label for halal certification.

Gluten-free tenders: swap the plain flour for a gluten-free blend and use gluten-free panko. The method stays the same, and the coating crisps just as well.

Halal swaps and notes: this recipe is halal as written — just use halal-certified chicken. Bottled hot sauce is usually fine, but check the label for halal certification if you are unsure.

What to serve with buffalo chicken tenders

Tenders are a meal on their own, but the right sides turn them into a proper dinner. Air fryer fries are the obvious partner, and a cucumber-tomato salad with lemon and olive oil cuts through the richness.

Storage and reheating

Store leftover tenders in an airtight container in the fridge for 3 to 4 days, or freeze them for up to 3 months. Sauce them only when you are about to eat — unsauced tenders reheat much better, so keep leftover sauce separate. To reheat, air fry at 375°F (190°C) for 4 to 5 minutes until crisp again, then toss in warmed sauce if you like. Avoid the microwave — it turns a crunchy coating soggy in seconds.

Frequently asked questions

How long do chicken tenders take in the air fryer?
About 12 to 14 minutes at 400°F (200°C), flipping once halfway through. They are done when the coating is deeply golden and a thermometer reads 165°F (74°C) at the thickest part.

Why is my panko coating falling off?
Usually the strips were not rested after breading, the flour layer was too thick, or the tenders were crowded. Rest them 5 minutes, shake off excess flour, and cook in a single roomy layer.

Can I make buffalo chicken tenders ahead of time?
Yes — bread them up to a day ahead and keep them covered in the fridge. Cooked tenders keep 3 to 4 days; re-crisp unsauced tenders in the air fryer and toss in fresh warm sauce.

Is this air fryer buffalo chicken tenders recipe halal?
Yes, 100%. Use halal-certified chicken and the recipe is fully halal — no alcohol and no pork products. Just check bottled hot sauce and dips for halal certification if that matters to your household.
