French fries are the most-ordered side dish in the world for a reason: salty, golden, crisp outside and fluffy in the middle, they go with almost everything. The air fryer makes them better at home than almost any other method — no pot of bubbling oil, no greasy kitchen, no soggy fries. These air fryer french fries come out deeply golden and crackly, with soft centres, in about 30 minutes from scratch.
The secret is a 30-minute soak in cold water. Soaking rinses the starch off the cut potatoes — the starch that makes homemade fries go limp and sticky. Rinse it away, dry the fries, and the air fryer crisps every edge while the inside steams itself fluffy.
Everything here is 100% halal: potatoes, oil, salt and spices — no alcohol, no pork products. If you already love my Air Fryer Sweet Potato Fries, these classic fries are the same idea with regular potatoes, and they crisp up even better.

Air Fryer French Fries
Ingredients
Equipment
Method
- Peel the potatoes and cut them into even 1/4-inch (about 6 mm) sticks. Try to keep every stick the same thickness so they cook at the same speed — uneven sticks mean some burn while others stay soft.
- Soak the cut fries in a large bowl of cold water for at least 30 minutes. This rinses off surface starch, which is the real secret to crisp fries. If you are short on time, 10 minutes still helps, but 30 is noticeably better.
- Drain the fries and dry them thoroughly with a clean kitchen towel or paper towels. They need to be properly dry — wet fries steam in the air fryer instead of crisping.
- Preheat the air fryer to 380°F (190°C) for 3 to 5 minutes. Toss the dry fries in a large bowl with the olive oil, salt, garlic powder, smoked paprika and black pepper until every stick is lightly coated.
- Spread the fries in the basket in a single layer with a little space between them. Cook in two batches if your basket is small — crowded fries go limp instead of crisp.
- Air fry at 380°F (190°C) for 12 to 15 minutes, shaking the basket or flipping the fries halfway through, until they are deeply golden and crisp at the edges. Thicker sticks may need the full 15 minutes.
- Taste one fry and season with a little extra salt while they are still hot. If you are making parmesan herb fries, toss the hot fries with the grated Parmesan and chopped parsley now.
- Serve straight away with ketchup, mayonnaise or ranch for dipping. Fries lose their crunch fast, so eat them hot — within 10 minutes is best.
Notes
Why you’ll love these air fryer french fries
First, the crunch. A proper fry should shatter a little when you bite it, then give way to a soft, steamy centre — and that contrast is exactly what the air fryer delivers. Hot air races around every stick at 380°F, whisking moisture off the surface so the outside crisps instead of steaming. The soak does the rest, so you get fries that taste deep-fried with only a tablespoon and a half of oil.
Second, there is no deep frying — no litres of oil, no splatter, no greasy smell, no jug of used oil. The batch cooks in 12 to 15 minutes and the basket shakes clean in seconds. And they are endlessly flexible: the same base fries take garlic parmesan, cajun seasoning or a herb toss, and they go with burgers, grilled chicken, fish or just a bowl of fries with ketchup.
What you need

The full measured list is in the recipe card. The pantry view: 4 large russet potatoes (about 900 g), cold water for soaking, a tablespoon and a half of olive oil, fine sea salt, garlic powder, smoked paprika and black pepper. To serve: ketchup, mayonnaise or ranch dip — plus Parmesan and parsley for the parmesan herb version.
Three choices matter most: russet potatoes (high starch gives a fluffy centre and crisp shell; waxy potatoes stay dense), even 1/4-inch sticks so they finish together, and fine sea salt so it coats every fry evenly.
How to make air fryer french fries
- Peel and cut the potatoes into even 1/4-inch (about 6 mm) sticks. Keep every stick the same thickness so they cook evenly.
- Soak in cold water for at least 30 minutes. This rinses off surface starch, the real secret to crisp fries. Short on time? Ten minutes still helps.
- Dry them thoroughly with a clean kitchen towel or paper towels. Wet fries steam instead of crisping — the number one reason homemade fries go limp.
- Season. Preheat the air fryer to 380°F (190°C) for 3 to 5 minutes. Toss the dry fries with the olive oil, salt, garlic powder, smoked paprika and black pepper until every stick is lightly coated.
- Arrange in a single layer. Spread the fries in the basket with a little space between them. Cook in two batches if your basket is small — crowded fries go limp instead of crisp.
- Air fry 12 to 15 minutes. Shake the basket halfway through, until the fries are deeply golden and crisp at the edges. Thicker sticks may need the full 15 minutes.
- Season again while hot. Taste one fry and add a little extra salt while they are still hot. For parmesan herb fries, toss the hot fries with the grated Parmesan and chopped parsley now.
- Serve straight away with ketchup, mayonnaise or ranch for dipping. Fries lose their crunch fast, so eat them hot — within 10 minutes is best.

Tips for the crispiest fries
Do not skip the soak. It is the single biggest difference between soggy homemade fries and crisp ones. The starch that clouds the soaking water is the starch that would have made your fries sticky.
Dry, dry, dry. The fries need to be properly dry before the oil goes on. Oil on wet potatoes slides off; oil on dry potatoes coats evenly and crisps.
Do not crowd the basket. Air fryers crisp by moving hot air, and pieces touching each other block that airflow. If your basket looks full, cook in two batches and keep the first warm in a low oven.

Variations and halal swaps
Parmesan herb fries: the version in the photo below. Toss the hot fries with 2 tablespoons of finely grated Parmesan and 1 tablespoon of chopped fresh parsley. The cheese melts lightly onto the fries. Use vegetarian Parmesan if that matters to your household.

Cajun fries: swap the smoked paprika for 1 teaspoon of cajun seasoning plus 1/4 teaspoon of cayenne. Serve with ranch dip to cool things down.
Sweet potato fries: the same method works, but cut them a little thinner and cook 2 to 3 minutes less — they brown faster and go soft if overcooked. My Air Fryer Sweet Potato Fries recipe has the exact timings.
Frozen fries: no time to cut potatoes? Cook them straight from frozen at 400°F (200°C) for 12 to 14 minutes, shaking halfway, with no oil at all. Season the moment they come out.
Halal swaps and notes: this recipe is halal as written — potatoes, oil, salt and spices, no alcohol, no pork products. For the parmesan version, check your Parmesan is made with vegetarian rennet if that matters, and check bottled dips for halal certification if unsure.
What to serve with air fryer french fries
Fries are the ultimate side dish — the natural partner for Air Fryer Chicken Wings on a game night, and they turn a grilled chicken breast or a burger into a proper dinner. A bowl of fries with two or three dips is a sharing plate in its own right.

For a full meal, serve them with a simple lemony salad, or pile them onto a board with burgers, coleslaw and pickles.
Storage and reheating
Store leftovers in an airtight container in the fridge for 2 to 3 days. They will soften — that is normal. To reheat, spread them in the air fryer at 375°F (190°C) for 3 to 4 minutes until crisp again. Avoid the microwave: it turns fries soggy in seconds.
Fries do not freeze well once cooked. To prep ahead, freeze raw cut fries instead: cut, soak, dry, then freeze the sticks in a single layer on a tray before bagging. Cook from frozen at 400°F for 14 to 16 minutes.

Frequently asked questions
Why do I need to soak the fries?
Soaking rinses surface starch off the cut potatoes — the starch that makes fries limp and sticky. Thirty minutes is ideal; even 10 helps.
Why are my air fryer fries soggy?
Almost always one of three things: wet fries, a crowded basket, or no shake halfway. Dry them properly, cook in a single layer, and shake at the halfway mark.
Can I use frozen fries in the air fryer?
Yes — cook straight from frozen at 400°F (200°C) for 12 to 14 minutes, shaking halfway, with no extra oil. Season the moment they come out.
Is this air fryer french fries recipe halal?
Yes, 100% — potatoes, oil, salt and spices, with no alcohol and no pork products. Just check bottled dips and Parmesan for halal or vegetarian suitability if that matters.
